Super Simple sauce recipe for Tanya…
Heat a large skillet on a Med-high burner. While the pan is heating, roughly chop 1/2 medium onion. Add a drizzle of olive oil to the hot pan and add onion. Drop in a teaspoon of jarred crushed garlic or about 2 cloves. (Put a pot of water on to boil for your pasta)Chop a medium zucchini in half lengthwise, and then into 1/4 inch slices. Add the zucchini to the onions, sprinkle with Italian or Pizza seasoning (about a teaspoon) and black pepper. Slice chicken sausage into coins ( I used a spinach asiago chicken sausage that came in a pack of 5 links, use whichever tickles your fancy or leave it out… either way, this will be good). When onions have softened, add the sausage to the pan. Stir and cook about a minute and add a can of crushed tomatoes. Cover and let it all cook down and together at a low simmer for about 10 minutes. Season with more pepper and salt to taste. Turn the heat to low to keep the sauce warm while the pasta cooks. Toss sauce with pasta and Nom.
