I gave in and made cookies. I read through some recipes on food network and combined a couple together to make delicious Earl Grey Shortbread cookies. They are like having your cuppa Earl Grey steeped very lightly with cream.
Heat oven to 350F
Cream butter until soft. Add sugar and mix until well incorporated. In a separate bowl, Stir together flour, cornstarch, salt and contents of the teabag. Add dry ingredients to butter mixture slowly and mix until just incorporated and crumbly. Knead in bowl several times to get smooth dough.
Put lump of dough into an 8”x8” square baking dish lined with parchment. Squish it out to a flat and even cookie, about 1/4” thick. Prick all over with a fork to prevent buckling and shrinking. If desired, sprinkle top with 1 Tbsp sugar.
Bake 15 minutes, then tap the baking pan against the rack to deflate dough. Turn pan to ensure even baking and bake an additional 10-15 minutes until golden all over and very lightly browned. Let cool 5 minutes, cut into 1.5”x3” bars. Let cool completely in pan.
They came out really crumbly, so I think I’m going to have to adjust the flour or something. Really good with a cup of milk and listening to the Danger Mouse/Sparklehorse song ft Flaming Lips that Licky posted earlier.
