Step 1: Put on some Demolition, Ryan Adams stylee.
Step 2: Chop the following vegetables (give/take a few): mushrooms, courgettes, peppers, onions. Whatever size you want. Me, I prefer big chunks of veg but hey! Use your own judgement quantity-wise.
Step 3: (meat optional) Melt some butter in a saucepan, whack in some basil and other awesome herbs and then cook some chicken pieces in it. When nearly cooked add about half the mushrooms, and when the chicken is cooked through add the rest of the veg. Stir regularly just to make sure it’s all getting a turn.
Step 4: When the vegetables are starting to get soft (according to taste), remove ingredients so far from the saucepan, and try and leave as much of the melted butter mix in there as possible. Keep the ingreds handy though as you will be using them later! :)
Step 5: Saute the remaining mushrooms in the butter, then add milk (enough to more than cover the ingredients) and a little flour (enough to thicken the sauce nicely) and possibly a little paprika. Add cheese (to taste) and stir lots to stop it all going to the bottom and not melting properly. Wait until the milk sauce thickens a fair bit and whop in the veggies and chicken.
Step 5: Leave the sauce to thicken and reduce a little, meanwhile prepare the pasta!
Step 6: Yum.
