Yummy chocolate cupcakes with peanut butter - cream cheese frosting as promised. I used a reduced sugar cake mix and substituted applesauce for the oil in the cupcakes. Regular smooth peanut butter whipped with 6 Tbsp of softened butter and 8oz fat free cream cheese and powdered sugar til it looked right. Tasted the cupcakes (before icing) to verify that they will be good, and tasted the frosting. Seperately they are good. Together.. they will probably be divine. Waiting for after dinner to find out. Oh, and for dinner. My roommate is making a mustard glazed pork shoulder, slow roasted to make into pulled pork sandwiches. He will also make some grilled veggies, and I’ll make some nummy sweet potato fries. Shazza is bringing a salad. Not sure if Monica is coming or no, but she will just need to bring herself (and a pepsi…). Listening to the 100 greatest one hit wonders (or something) on VH1 and building robots in my down time.
