I made these cupcakes for a birthday cookout this afternoon while listening to my Ryan Adams mix in Zune. Its a bit of a strange recipe, but they came out so soft and yummy. Kind of like a pudding cake. I kind of skimped on the amount of batter per cupcake because I heard I needed 17 cupcakes, and so I kind of frosted the cupcakes with the ganache after they cooled… they weren’t high enough to dip. I also halved the ganache recipe - definately didn’t need so much ganache.
These are kind of like little pudding cakes.
