If I’d seen the Banana Muffin recipe I would have tried those out, but instead I used a classic sponge recipe - 250g of each ingredient: SR flour, butter, sugar; 3 eggs, bit of baking soda… then I mashed up one large banana, mixed it all together and whacked it in the cases. 25mins at 200 degrees C… groovy! —sinkships
