The peppermint meltaways are cooling so that I can drizzle them with Chocolate or peppermint glaze tomorrow and then sprinkle them with pulverized candy cane.&lt;/p&gt;
&lt;p&gt;The first pan of chocolate chip came out of the oven. They are spreading too much as well as being doughy in the middle, so I’ll need to make the rest a bit smaller. That will stretch the dough into more cookies anyway. That will be tomorrow night :)&lt;/p&gt;

&lt;p&gt;So to make the ghosts, melt 3 tbsp of butter over low heat. When the butter is melted, add in 4 cups of mini marshmallows and melt those suckers too. Stir the mini marshmallows a lot while they are melting. When the Marshmallows are fully melted too, add in 6 cups of crisped rice cereal and stir to combine. Then take it off the heat and let it cool slightly. You’ll want the cereal mixture to be warm and pliable, but not so warm that it doesn’t stick together.&lt;/p&gt;
&lt;p&gt;Form 1/2 portions of the cereal mixture into ghosties (or whichever shape you like). Then melt 1/2 cup chocolate chips in the microwave (microwave for 30 seconds, stir, then microwave in 10 second increments, stirring every 10 seconds, until the chocolate chips are melted). Pour/spoon chocolate into a sandwich bag and squish all of it into one corner. Snip the corner off the bag to make a tiny hole. &lt;p&gt;Carving pumpkins. Baked pumpkin seeds. Pumpkin pie. Pumpkin Spiced Lattes (for my PSL lovers). &lt;i&gt;The husband’s homemade pumpkin bread&lt;/i&gt;. It is divine. He makes a dozen batches throughout the season and we give them away as gifts/ take them into the office to share with coworkers. Just writing about it is makes my mouth water!&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Here’s the recipe: &lt;/b&gt;&lt;/p&gt;
&lt;p&gt;PREP: 10 MIN., BAKE: 1 HR.&lt;/p&gt;
&lt;p&gt;This makes three loaves, so there are two to give away and one for you; they also freeze well.&lt;/p&gt;
&lt;p&gt;3 1/3 cups all-purpose flour&lt;/p&gt;
&lt;p&gt;3 cups sugar&lt;/p&gt;
&lt;p&gt;2 teaspoons baking soda&lt;/p&gt;
&lt;p&gt;1 ½ teaspoons salt&lt;/p&gt;
&lt;p&gt;1 1/3 teaspoons ground cinnamon&lt;/p&gt;
&lt;p&gt;1 teaspoon ground nutmeg&lt;/p&gt;
&lt;p&gt;1 cup vegetable oil&lt;/p&gt;
&lt;p&gt;2/3 cup water&lt;/p&gt;
&lt;p&gt;4 large eggs&lt;/p&gt;
&lt;p&gt;1 (15-ounce) canned pumpkin&lt;/p&gt;
&lt;p&gt;optional: chopped walnuts (he usually adds these to 2 loafs and has 1 without. I think it tastes 1000x’s better with the walnuts)&lt;/p&gt;
&lt;p&gt;STIR ingredients together in a large bowl until smooth. Divide batter evenly among 3 greased and floured 9- x 5-inch loaf pans.&lt;/p&gt;
&lt;p&gt;BAKE at 350° for 50 minutes to 1 hour or until wooden pick inserted into center of each loaf comes out clean. Cool in pans on wire rack 10 minutes. Remove from pans, and cool completely on wire rack.&lt;/p&gt;

&lt;p&gt;This recipe is so easy, and I think better than most frozen veggie patties. I switch it up just about every time I make them, so feel free to improvise with what you have in your kitchen.&lt;/p&gt;
&lt;p&gt;1 can black beans, rinsed well and drained&lt;/p&gt;
&lt;p&gt;1 can diced green chilies&lt;/p&gt;
&lt;p&gt;1 clove garlic&lt;/p&gt;
&lt;p&gt;1/2 cup bread crumbs or panko&lt;/p&gt;
&lt;p&gt;Salt, pepper, cayenne, paprika and Cumin to taste.&lt;/p&gt;
&lt;p&gt;1/2 cup frozen corn, thawed (or a small can of corn, drained)&lt;/p&gt;
&lt;p&gt;extra bread crumbs or cornmeal for making patties&lt;/p&gt;
&lt;p&gt;Olive Oil&lt;/p&gt;
&lt;p&gt;First mash the beans. I do this with a hand held masher (I call it potato masher, but my friend’s husband told me that it is a bean masher if you come from Guadalajara).  You can also use the food processor, but I think it squishes too much texture out of the beans. Next use a garlic press to squish the garlic into the beans and stir it in. Next add bread crumbs and spices to taste. I really like spicy and smoky, so I put in a lot of cayenne and cumin. Paprika amps up the vitamin c and adds color. I don’t usually add salt since canned beans have a lot already, but to each his own.  Add in the green chilies and the corn and stir it up well. It might be a bit too wet, if so, add more bread crumbs. You want a thick paste that is easy to form into balls.&lt;/p&gt;
&lt;p&gt;Now, fold a piece of parchment paper in half and place on a saucer. Sprinkle the inside of the parchment with cornmeal or more crumbs, and add a ball of the bean mixture. Roll the beans in the cornmeal to coat all sides lightly. Fold the parchment over the top and use a second saucer to flatten out the ball to the thickness you like.  You should be able to make 4 patties, or you can make smaller ones if you want.&lt;/p&gt;
&lt;p&gt;Heat a skillet and add a little olive oil. Add in a bean patty and fry a couple minutes until golden on both sides and warmed throughout.&lt;/p&gt;
&lt;p&gt;Serve on toasted english muffins or whole wheat toast with the cheese of your choice.&lt;/p&gt;

I have done this a few times and found that with a higher fat content, the yogurt comes out thicker. I told my sister this and she said “Duh!”. Guess I was supposed to know. So far I’ve done 1%, 2% and whole milk. Whole was awesome, but I am staying more on my calorie path .. so.&lt;/p&gt;
&lt;p&gt;Since the yogurt comes out runnier (almost like kefir milk), I added corn starch when the milk was hot. And I whisked that cornstarch in really good because last time I ended up with lumps in my yogurt, which was plain unappetizing. Once the milk cooled, I added in some splenda (my honey bear is nearly empty) and whisked in the yogurt. As you can see, I found some containers to help with portioning the yogurt. These are from the canning section, supposedly for making freezer jam.&lt;/p&gt;
&lt;p&gt;Now, I’m hoping that it works out right as I’ve noticed that my thermometer is about 40degrees off. I need a new thermometer I guess…. I’ll let you all know later.&lt;/p&gt;
